WEST PALM BEACH, FL: A South Florida restaurant chain has named a 20-year industry veteran as its lead executive.

Maxwell Piet is the new president and CEO of West Palm Beach-based TooJay’s Deli. Piet succeeds Christopher Artinian, who will remain on the company’s board of directors.

Piet formerly was senior vice president of The Meatball Shop in New York City, where he led the company’s operations, human resources, marketing and finance as it grew year-over-year sales by more than 10 percent. He started in the business after being recruited by Ruby Tuesday when he was 24 years old and eventually rose to the chain’s vice president of operations.

Piet also was a consultant for casual restaurant chains.

“Looking ahead, I see exciting opportunities to delight new generations of guests with TooJay’s genuine New York deli tradition, which has timeless appeal,” Piet said.

Founded in 1981, TooJay’s has 27 statewide locations, including nine in Central Florida.

Under Artinian’s leadership, the brand was expected to open three locations a year and possibly expand outside of Florida.

“As we update our restaurants, open new locations, enhance our menu and utilize the technology our guests prefer, we will always stay true to our great culinary heritage,” Piet said.
